Homemade 3 step muesli bars (gluten free)

This is an easy muesli bar recipe that you can basically add what you like, leave out if you don’t have or replace with something else such as apricots instead of goji berries!

In a  blender whiz up:

8-10  fresh dates (pips removed)

1/2 cup goji berries

1/2 cup coconut flakes

1/2 cup gluten free oats

1/2 cup sunflower seeds

1/2 cup pepitas

1/2 cup walnuts

1/3  cup linseed

2 tbsp sesame seeds

2 tbsp chia seeds

1 tbsp maca powder

You can combine this until the mixture is to your required consistency then add in

1/2 cup raw honey

3 tbsp coconut oil melted

Blend again until all combined.

 

Press into a baking tin lined with baking paper and bake for approx 30 mins on 180c.

Once cooled cut into slices and enjoy!
