I had no idea how easy these were to make!
I use whatever is in the cupboard and they always taste great. So if you don’t have exactly what I use just exchange it for something else you have or take out. You cannot go wrong with making these balls.
Depending on what type of machine you are using you may have to just add a few ingredients at a time but basically I am able to pop the whole lot in except the coconut milk I pop in at the end.
In a blender whiz up:
8-10 fresh dates (pips removed)
3/4 cup almonds
1/2 cup cashews
1/2 cup walnuts
1/2 cup coconut flakes
1 cup rice puffs
1/4 cup cacao powder
1 teaspoon vanilla extract
Pinch sea salt
2-3 tbsp coconut oil melted or I use coconut milk. I start with 2 and if required add more as needed.
Blend again until all combined. Wet hands and roll into balls. Add some shredded coconut into a small bowl and roll the balls around until coated.
Allow balls to set in the fridge or freezer for at least 30 minutes.
