We have this gorgeous Mulberry Tree and always end up with so many berries and what to do with them all. Most are used in smoothies but thought I would experiment and add into a muffin mix. As mentioned I am no chef but these were a huge hit in our house. Kids enjoyed taking to school in our snack pockets. Where possible try and use organic ingredients.
Makes around 14-16 muffins
2 cups of S/R Flour
1/2 cup cocoa powder
1/2 tsp pure vanilla extract
2 free range/organic eggs ( mine where small)
1 cup of coconut milk
3/4 cup coconut sugar
3/4 cup organic Mulberries
3/4 dark choc chips
Preheat your oven to 180C
Prepare you muffin tray, you can either line with cases or make sure you grease very well.
Cream your butter with your sugar until smooth.
Once combined add in your eggs, vanilla extract, milk and berries then mix. I used a high speed on my mixer so as to break up the berries. My end result was like a thickish milk shake. You could leave some out and fold them in with the choc chips at the end.
Add your cocoa and flour till all mixture is combined.
You then fold in your choc chips and some extra berries if you are after some plump and firm ones through the muffins.
Spoon into your muffin cases.
Bake for around 25-30 minutes, I normally insert a toothpick in the middle to check if cooked.
